Apple & Blackberry Crumble

Hi everyone, it’s great to see you. I hope you’re all well and staying safe.

I think it’s time to spoil ourselves a little with a quick and easy dessert.

Who can resist a yummy crumble? I used to buy crumbles all the time and put them in the freezer for when I felt like I wanted a treat, but not too naughty. But, when you buy them pre-made, you just never know how much sugar is in them, not good really. So why not make a crumble at home? It can't be that hard, I mean, we used to make them at school in cooking class!!



This is a really simple recipe, have a good and see what you think.

Makes 6 individual crumbles.

Prep time – 15 minutes. Cooking time – 25-30 minutes

INGREDIENTS


Filling:

  • 500g apples

  • 300g blackberries (fresh or frozen)

  • 1 tsp lemon juice

  • 2 tsp ground cinnamon

  • 2 tsp vanilla extract

  • 3 tbsp maple syrup

  • 15g butter


CRUMBLE:

  • 100g plain flour

  • 120g unsalted butter (cut into cubes)

  • 60g ground almonds

  • 50g brown sugar

  • 60g hazelnuts (roughly chopped)

  • 100g oats

METHOD

  1. Preheat the oven to 180ºC.

  2. Peel and chop the apples into bite-size pieces.

  3. Leaving the blackberries to one side put the rest of the filling ingredients into a pan and cook over a medium heat, stirring occasionally. Test the apples to see if they have softened.

  4. Once apples have softened, add blackberries, and mix. Turn off the heat after a couple of minutes and set aside.

  5. To make the crumble, mix the flour and butter with your fingers until it looks like breadcrumbs.

  6. Tip in the rest of the crumble ingredients and continue to mix with fingertips.

  7. Divide the filling into 6 ramekins.

  8. Top with as much crumble mixture as you prefer, but don’t press it down.

  9. Place ramekins on a baking tray and cook in the oven for 15-20 minutes, add on a few more minutes if needed until the top has browned.

  10. Best served hot. Eat as is, but great with ice-cream or custard.

TIPS

  • Make it vegan by using vegan butter/margarine.

  • Experiment with other fruits, choose your favourite and let me know so I can try new variations too.

  • Make a big family-sized crumble, works just as well in a big dish, it might need a few extra minutes cooking time in the oven.

  • Don’t like hazelnuts? It’s ok, just use what you like - pecans, walnuts, cashews, etc all work well. Or, leave out nuts completely if you don’t like them or need to avoid them.

  • Don’t have almonds? Don’t want to use them? That’s ok too, just substitute for the same amount of plain flour or another nut.

  • Great for freezing – wrap the ramekin or dish in cling film before cooking and freeze – when cooking from frozen, add an extra 10 minutes to the time.

This is a great recipe that can be chopped and changed to your preference.
